SHRIMP SCAMPI AND LINGUINE 
2 lbs. shrimp
1/4 lb. butter
1/2 c. olive oil
1 tbsp. lemon juice
1/4 c. chopped shallots or scallions
1 tsp. finely chopped garlic
1 tsp. salt and ground pepper
4 tbsp. finely chopped parsley

Preheat broiler to highest temperature. Melt butter; stir in olive oil, lemon juice, shallots, garlic, salt and pepper. Simmer sauce in frying pan for approximately 15 minutes.

Put shrimp in pan large enough to hold one layer. Add sauce to pan (coating shrimp completely). Broil 3-4 inches from heat approximately 5 minutes. Turn, broil 4-10 minutes more. After shrimp is removed, put linguine in pan and swoosh around in sauce.

Pour the rest of the sauce over the shrimp. Sprinkle on parsley and Parmesan cheese. Serve with lemon quarters.

Best when all ingredients are FRESH.
