SHRIMP CREOLE 
1 lb. raw shrimp, peeled
1 pkg. okra, thawed
2/3 c. chopped green onion
3 cloves garlic, minced
1 green pepper, diced
2 stalks celery, diced
1 can tomatoes, chopped
2 cans beef broth
1 or 2 bay leaves
1 1/2 tsp. salt
1/2 tsp. pepper
Cayenne pepper to taste
Tabasco to taste
1 tbsp. file powder, optional
1 c. shoe peg corn, optional

Saute okra in small amount of olive oil until almost dry. Add tomatoes, green onions, green pepper, celery, garlic, broth, and seasonings. Simmer until vegetables are tender and mixture has slightly thickened.

Add shrimp and cook slowly 10 minutes longer. May be frozen without shrimp.
