TURKEY, ASPARAGUS, AND RICE
CASSEROLE
 
1 lb. thin sliced turkey breast, cooked
6 tbsp. butter
6 tbsp. flour
1 med. onion, minced
1 c. milk
Salt and pepper
2 c. cooked rice
1/2 c. grated mild cheddar cheese
1 c. tender asparagus spears

Butter large casserole. Place rice in bottom. Then cover with asparagus and follow with sliced turkey on top of asparagus. Saute onion in butter. Stir in flour and brown slightly. Add milk a little at a time, stirring constantly until smooth and thickened. Add cheese stir until melted, add salt and pepper to taste. Pour sauce over contents of casserole and bake at 350 degrees until contents are very hot and sauce bubble up or 20 minutes.
