CREAMY POTATO SOUP 
6 med. unpeeled red potatoes (about 2 lbs.)
1/4 c. chopped green onions
1 (2 oz.) jar diced pimiento, drained
1/2 c. reduced calorie mayonnaise
1/2 c. light sour cream
2 tbsp. prepared mustard
1 tbsp. sugar
1/2 tsp. celery seeds
1/2 tsp. salt
1 tbsp. white wine vinegar
1/4 tsp. pepper
1/8 tsp. garlic powder

Place potatoes in medium saucepan, cover with water and bring to boil. Cover, reduce heat, simmer for 25 minutes or until tender. Drain and let cool. Peel and cut into 1/2" cubes. Combine potatoes, green onions and pimiento in large bowl. Combine mayonnaise and next 8 ingredients. Add to potatoes and toss gently to coat. Cover and chill well. Serves 6.

1/2 cup serving, 93 calories, 2.5 gr fat, 3 gr cholesterol. This is a very low fat version of traditional potato salad.
