ROMAINE LETTUCE WITH PEAS 
1 lg. head Romaine lettuce (coarsely shredded)
1 pkg. frozen peas
1/4 c. chopped parsley
1/4 - 1 tsp. salt
2 tsp. sugar
1 c. water
1 sm. onion, minced
2 tbsp. butter
2 tbsp. flour

Combine lettuce, peas, parsley, sugar, salt and water. Cook over low heat until peas are tender. Drain. Reserve 1 cup liquid and vegetables.

Saute onion in butter until soft. Sprinkle with flour. Stir in reserved liquid. Blend thoroughly to prevent flour from lumping. Add lettuce, peas. Season to taste with salt. Simmer covered until heated. Makes 4-6 servings.
