TOMATO SAUCE 
2 to 3 garlic cloves (at least)
1/2 onion (at least)
1 can tomato paste
2 lg. cans Roma tomatoes (or 5 c. tomato puree - no salt)
1 1/2 c. (approx.) of all, some, or other vegetables: cauliflower, broccoli, mushrooms, carrots, chili peppers, Jalapenos
Spices (basil, parsley, oregano...) to taste

In a large pot, fry garlic and onion (no oil is necessary with a non-stick pot). Add tomatoes, vegetables, and spice. Simmer on low heat, covered, for one hour.

Uses: Pasta sauce, in lasagna, sandwiches, in rice, on potatoes, etc.
