SALMON CROQUETTES 
1 (16 oz.) can pink salmon, bones & skin removed
1 lg. onion, finely chopped
Juice of 2 lemons
2 lg. eggs, slightly beaten
1 c. milk
3 1/2 c. saltine cracker crumbs
Salt & pepper to taste

Mix all ingredients, reserving 1 3/4 cups cracker crumbs. Chill mixture for several hours. When ready to use, shape mixture into balls or patties. Roll in remaining crumbs, fry in hot oil.
