ARTICHOKE CHICKEN SAUTE 
2 cloves garlic, chopped
Butter
Oil
2 c. cooked, chopped chicken
4 med. artichokes, cooked and coarsely chopped
1 lg. tomato, cut into wedges
1/2 lb. mushrooms
Salt and pepper to taste
Chopped parsley
Green and red peppers, thinly sliced

Saute the garlic in equal portions of butter and oil. Add the cooked chicken, artichokes, tomato and mushrooms and continue to saute until thoroughly heated. Season with salt and pepper to taste and sprinkle chopped parsley over all. Add thin slices of red and green peppers to saute mixture. Add your favorite seasonings. Serves 4.
