ZUCCHINI CASSEROLE 
1 lb. ground beef
1 onion, sliced
1 zucchini squash, sliced
1 stalk celery, sliced thin
1 c. grated cheddar or Monterey Jack cheese
1 tsp. salt
1/2 tsp. garlic powder

Saute ground beef, onion, zucchini and celery in frying pan. Grate cheese and mix with meat and vegetables when they are tender. Add salt and garlic powder. Pour into 8 x 8 inch baking dish and bake at 350 degrees for 30 minutes. Serves 4 to 6.
