PISTACHIO COOKIES 
1 c. shortening
2 c. sugar
2 tsp. almond extract
2 boxes pistachio instant pudding
5 tsp. baking powder
8 c. flour
4 eggs
1 tsp. vanilla
1 c. milk
1 bottle chopped cherries

Mix dry ingredients together first, then mix in the rest until blended. Form into balls and bake at 350 degrees for about 10-12 minutes or until bottoms are lightly golden brown.

Let cool completely (optional). You can sift powdered sugar over cookies lightly.
