DUTCH APPLE PANCAKE 
4 eggs
3/4 c. milk
3/4 c. flour
1 tbsp. sugar
1/4 tsp. salt
2 tbsp. butter
5 lg. cooking apples, pared, cored and sliced
2/3 c. sugar
1/4 tsp. cinnamon
1/3 c. butter
1 tbsp. lemon juice

Mix eggs, flour, milk, 1 tablespoon sugar and salt in medium bowl. (Batter will be thin and lumpy.)

Melt 2 tablespoons butter and put into 10-inch deep dish pie plate. Tilt plate to coat sides, then pour batter into plate. Bake in preheated 425 degree oven for 20 minutes or until crust is brown. Do NOT open door during baking.

Mix apples, 2/3 cup sugar and cinnamon. Heat 1/3 cup butter and lemon juice in large skillet until bubbly; saute apples until tender, 5-6 minutes. Spoon apple mixture into pancake. Cut pancake into wedges to serve.
