TURKEY SALAD 
2 qts. cut up turkey (or chicken)
2 cans water chestnuts, sliced
2 cans mandarin oranges, drained
1 (30 oz.) tin pineapple chunks, drained
2 qts. celery, diced (you can use more or less celery)
2 c. slivered almonds, toasted

Add almonds just before serving, reserving some to sprinkle on top.

DRESSING:

3 c. mayonnaise
1 tbsp. curry powder
2 tbsp. soy sauce

Mix dressing day before using as it improves the flavor.
