SPICY RED CABBAGE 
2 tbsp. butter, butter or bacon fat
1 c. chopped peeled apples
3/4 c. chopped onions
1 1/2 lbs. red cabbage (shredded not too fine)
2 tbsp. vinegar
1/2 tsp. mixed pickling spices (tied in a piece of wet cheese cloth)
2 tbsp. water
1 tsp. salt
1/8 tsp. pepper
4 tsp. sugar

Melt fat in a Dutch oven type pan which has a cover. Add all ingredients and stir together. Cover, simmer until cabbage is done to desired tenderness. Simmer uncovered for a few minutes, if necessary to evaporate any excess liquid. Serves 6. Remove spice bag before serving.
