POTATOES IN MUSTARD SAUCE 
6 med. potatoes
1 med. onion, chopped
6 tbsp. butter
3 tbsp. flour
1 1/2 c. chicken broth
1 tsp. salt
1/2 tsp. pepper
2 tbsp. prepared mustard
1/4 c. bread crumbs, buttered
1/2 tsp. celery seed

Boil the potatoes in their jackets until tender; then peel and cut into small chunks. Place in a greased casserole. Saute the onion in the butter. Stir in the flour and add the chicken broth slowly. Cook until thick. Add the salt, pepper, mustard, and celery seed, and continue cooking on low heat for 10 minutes. Pour the mixture over the potatoes and sprinkle bread crumbs on top. Bake for 15 minutes in a 375 degree oven or 5 minutes in a microwave oven. This can be prepared ahead with the exception of the last 15 minutes baking time. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
