TWICE BAKED POTATOES | |
6 large baking potatoes vegetable oil 1/4 c. (1/2 stick) butter 1 c. sour cream 1 egg, beaten 1 1/2 tsp. salt 1/8 tsp. pepper paprika Preheat oven to 400°F. Rub potatoes with oil, place on baking sheet. Bake at 400°F for 1 hour. Cut a long oval slice from potatoes; scoop out pulp. Combine butter, sour cream, egg, salt and pepper; blend well. Add to potato pulp and mix thoroughly. Pile filling back into potato shells, piling high. Sprinkle with paprika. Wrap in foil and place in plastic bags. Freeze. To serve: Thaw. Preheat oven to 400°F. Remove foil; place potatoes on baking sheet. Heat thoroughly, about 40 minutes. Serves 6. Submitted by: Angie Harrell |
