ORANGE BATTER PUDDING 
Mix together and let come to a boil and place in a casserole: Juice and grated rind of one orange, 1 1/2 cups water, 1 cup sugar and 1 tablespoon butter.

Add by spoonfuls the following batter:

1/2 tbsp. butter
1 c. flour
1 tsp. baking powder
1/2 c. sugar
1/2 c. milk

Bake in moderate oven, 350 degrees, about 20-25 minutes. Do not over cook. Serve warm.

Note: In place of the 1 1/2 cups water I use 1 1/2 cups orange juice and very little or no sugar. It is delicious!
