COCONUT BALLS 
2 eggs, beaten
2/3 c. sugar
1 c. chopped dates
2 tbsp. butter

Beat eggs in pan. Add sugar and butter. Place over low heat and add dates. Stir constantly until thickened, about 7 to 10 minutes.

Remove from heat and add: 1 c. chopped nuts 1 tsp. vanilla

When cool enough with buttered hands shape into balls. Roll in coconut. Place on waxed paper. Store in covered container.
