CREOLE SNAP BEANS | |
2 lbs. fresh green beans 1/4 lb. ham 3 lg. onions, chopped 3 cloves garlic, minced 1 1/2 c. water Salt & pepper to taste Wash, string and cut beans into small pieces. Fry ham until light brown; remove ham. Pour off drippings, except for 2 tablespoons; add onions and garlic and cook until onions are soft. Return ham to skillet; add beans, 1/2 cup water, salt and pepper. Cover; turn heat low and cook for about 1 1/2 hours. During cooking period occasionally add additional water. Serves 6. |
