BANANA SALAD | |
1 c. brown sugar 4 tbsp. flour 1 egg 1 tbsp. vinegar 1/2 c. evaporated milk 2 tbsp. butter 1 tsp. vanilla 1/2 c. chopped peanuts 8 to 10 bananas - depending on size Mix brown sugar and flour. Add egg and beat well. Then add vinegar, milk and butter. Cook until thick, stirring constantly as it sticks easily. Cook until it is like a thick custard. Add vanilla after cooking. Mix bananas and part of the peanuts with sauce. Garnish the top with remaining peanuts. After the sauce cools it can be refrigerated for up to two weeks. It will be very thick but the bananas will dilute it when mixing. If the sauce gets lumpy when cooking use a whisk. |
