CREAMY ONION AND POTATO SCALLOPS 
1 qt. sliced, peeled potatoes (about 2 lbs. whole)
1 c. sliced onions (about 1/2 lb.)
4 tsp. butter
4 tsp. flour
3/4 tsp. salt
Dash pepper
1 1/3 c. milk

In a saucepan melt butter on medium heat; add flour and seasonings. Blend well. Gradually add milk, stir and cook until thickened. Gradually add milk, stir and cook until thickened. In a 1 1/2 quart greased casserole layer half the potatoes, and all onions; add half the sauce. Top with remaining potatoes and sauce. Bake at 350 degrees for 1 1/2 hours. NOTE: For a main dish, top potatoes with ham slices.
