SAUSAGE AND PEPPER HERO | |
2 lbs. sweet Italian sausage links, cut in 1 inch pieces 2 tbsp. vegetable oil 3 c. sliced green bell peppers (3 lg.) 1 1/2 c. sliced onions 1 (29 oz.) can crushed tomatoes 1 tsp. salt 1/2 tsp. dried basil 1/2 tsp. dried oregano 1/4 tsp. black pepper 2 (15 inch) long loaves Italian or French bread 8 oz. Mozzarella cheese, shredded In Dutch oven, cook sausages over medium heat until browned. Remove with slotted spoon; drain on paper towels; discard drippings. Heat oil in Dutch oven over medium heat. Add green peppers and onions and cook 5 minutes or until onions are wilted. Add tomatoes, salt, basil, oregano, pepper, and the browned sausages. Simmer 30 minutes, stirring occasionally. Meanwhile, split bread almost through horizontally. Place each loaf on a double layer of foil large enough to cover bread. To serve immediately, fill 1 loaf with half the sausage mixture; sprinkle with half the cheese. Wrap in foil. Bake in preheated 400 degree oven for 15 minutes or until cheese is bubbly. To freeze, cool sausage mixture completely. Fill bread; sprinkle with cheese. Wrap in foil and freeze. To bake frozen, place wrapped loaf in preheated 400 degree oven for 45 minutes or until hot. |
