SAUSAGE, PEPPER AND POTATO SKILLET | |
1 lb. Italian-style sausage, sliced 1 inch thick 1 med.-size yellow onion, cut into 1 inch cubes 1 lg. sweet green pepper, cored, seeded and cut into 1 inch squares 1 lg. sweet red pepper, cored, seeded and cut into 1 inch squares 1 1/2 lb. small new potatoes, cut into 3/4 inch cubes 3/4 c. water 1/8 tsp. black pepper Step 1: Brown sausage on all sides in a deep 12 inch skillet over moderate heat, 10 minute. Drain off all but 2 tablespoons drippings. Step 2: Stir in onion, green and red peppers, potatoes, water and black pepper. Reduce heat to low, cover, cook for 10 to 20 minutes on until potatoes are tender. |
