MEDITERRANEAN PEPPER SKILLET 
1 lb. mild sausage, cut into 1 inch pieces
2 med. onions, sliced
1 tbsp. vegetable oil
1 (13 oz.) can beef broth
1 c. converted style or long grained rice
1 med. green pepper, cut into julienne strips
1 med. tomato, chopped

Cook sausage and onions in oil in a 10 inch skillet over medium heat until sausage is brown, drain excess fat. Add enough water to broth to make 2 1/2 cups liquid. Add liquid and rice to skillet. Bring to boil. Cover tightly and simmer 20 minutes. Stir in pepper and tomato. Remove from heat. Let stand covered until liquid is absorbed, about 5 minutes. Makes 4 servings.
