TEXAS CAVIAR 
4 cans black eyed peas, drained
1 c. salad oil
1/2 c. wine vinegar
1 clove garlic
1/2 c. thinly sliced onions
1/2 tsp. salt
Pepper

Combine ingredients. Store in refrigerator indefinitely. Remove garlic after 24 hours. Serve with crackers for dip.
