1 c. bulgur 1 c. boiling water 1/4 c. olive oil 1/3 c. (or less) fresh lemon juice 1 tsp. salt 1/4 tsp. garlic powder 1/2 tsp. oregano Dash cayenne pepper 1/4 c. scallions 1 bunch fresh parsley 1 lg. tomato Pour boiling water over bulgur and let sit 1/2 hour. Mix well oil, lemon juice, salt, garlic powder, oregano and cayenne. Mix bulgur and chopped up scallions, parsley and tomato. Pour in oil mixture and stir well. Best if refrigerated a few hours before serving or even better if allowed to sit longer. The other thing to remember is to use fresh lemon juice and fresh parsley. Otherwise, it just won't be as good. |
