SUNSHINE ORANGE CAKE 
1 pkg. orange cake mix

FILLING:

1 1/4 c. sugar
5 tbsp. cornstarch
2/3 c. water
1/2 c. orange juice
1 tsp. orange peel
Red & yellow food coloring

Heat oven to 350 degrees. Grease and flour 2 (9") round cake pans.

Prepare; bake and cool cake following package directions.

For Filling: Combine sugar and cornstarch in small saucepan. Stir in water, orange juice and peel. Cook on medium heat, stirring constantly, until mixture thickens and turns translucent. Remove from heat. Stir in few drops of each food coloring to achieve orange color. Refrigerate 2 hours.

Place one cake layer on serving plate. Spread with half of orange filling. Top with second layer. Spread remaining filling on top to within 1" of edge.

Frost sides and remaining edge of top with favorite white frosting.

TIP: Lemon or pineapple mixes may be substituted with lemon juice or pineapple juice.
