TEXAS TORTELLINI 
1 lb. tortellini
1 c. olive oil
3/4 c. white wine vinegar
1/2 tsp. black pepper
2 cloves minced garlic
1 tsp. dry mustard
1 tsp. paprika
1 tsp. salt
Dash of Tabasco
1 c. diced green pepper
1 c. diced red pepper
2 c. chopped tomato
1 c. minced parsley
1 c. grated cheddar cheese
Shredded lettuce

Cook tortellini. Mix all other ingredients except cheese and lettuce. Toss with tortellini and marinate 2-4 hours. Serve on shredded lettuce and sprinkle with cheese.
