CHICKEN SOUP WITH LUKSHIN 
1 whole chicken, cut up into quarters
soup greens
1 onion
1 parsnip
1 turnip
4 carrots
4 celery stalks
handful of parsley
potful of water
salt and pepper
1 box Goodmans fine noodles

Wash and clean chickens. Put in large pot and fill with cold water to top. Sprinkle with 2 tablespoons of salt.

Bring to boil and lower heat. Keep simmering fat that comes to top of pot (for about 1/4 hour).

Place washed whole soup greens (only cut carrots and celery into large pieces) in pot with chicken. Add salt and pepper to taste. Cover and simmer for 2 hours.

Cook 16 ounces fine noodles separately according to directions on box. Drain and put in separate bowl.

When soup is done, remove vegetables and chicken and strain soup. Add cut up chicken, carrots and noodles to clear soup.
