APRICOT ICE CREAM 
12 or more canned, peeled, pitted apricots
2 tsp. lemon juice or apricot brandy
1 qt. vanilla ice cream
Chopped pistachios or whipped cream & glazed apricot pieces (optional)

Puree enough apricots in an electric blender or food processor to measure 1 cup. Add the lemon juice or apricot brandy. Soften the ice cream and quickly stir the apricot mixture into it. Pack the ice cream in plastic containers, cover and freeze until firm.

To serve, spoon the ice cream into dessert glasses and, if desired, decorate with chopped pistachios or whipped cream and glazed apricot pieces. Makes 1 generous quart.
