VENISON SWISS STEAK 
1 lb. venison steak, 1 inch thick
1 tsp. salt
1/2 tsp. pepper
Flour
Cooking oil
1/2 c. water
Tomato juice
1 large onion, sliced

Rub meat with salt and pepper. Pound all flour possible into steak. Sear in hot oil. Add water, tomato juice, and onion. Simmer slowly until done, adding more tomato juice as needed to keep meat covered. Serve with wild rice.
