RUTH'S SWEET POTATO CASSEROLE 
3 cups sweet potatoes, cooked and mashed
1/2 cup sugar
3 eggs, beaten
1/3 cup milk
1/2 cup (1 stick) butter
1 tsp. vanilla
1/2 tsp. cinnamon (optional)

Mix all ingredients together and put into a baking dish. Chill in refrigerator until firm.

TOPPING:

1 cup light brown sugar
1/3 cup butter, softened (no subs!)
1/2 cup all-purpose flour
1 cup chopped pecans

Prepare topping after potato mixture is chilled. Spoon over top.

Bake at 350°F for 45 minutes.

Variation: Some people like to add cinnamon to the potato mixture, but my family doesn't like it that way.
