CHEESE CAKE CUPCAKES 
2 (8 oz.) pkgs. cream cheese, softened
2 eggs
1 tsp. vanilla
1 tbsp. lemon juice
3/4 c. sugar
12 vanilla wafers

Preheat oven to 375 degrees. Line a muffin tin with cupcake papers.

Beat together cream cheese, eggs, vanilla, lemon juice, and sugar. Place a vanilla wafer in the bottom of each cupcake paper. Fill each 2/3 full with cream cheese mixture. Bake for 20 to 25 minutes. Let cool; top with your favorite fruit pie filling. Yield: 1 dozen.
