CHEESECAKE CUPCAKES 
30 cupcake holders
3 (8 oz.) pkgs. softened cream cheese
2/3 c. sugar
1 tsp. vanilla
3 eggs, beaten
30 vanilla wafers
Favorite pie filling

Mix cheese, sugar, vanilla and eggs together. Place a vanilla wafer in bottom of each paper cup. Spoon cup half full with mixture. Bake at 350 degrees for 15 minutes. When cooled, top with pie filling. Great for picnics!
