GRANDMA'S OATMEAL CRUNCHIES 
1/2 c. butter (1 stick)
1/2 c. light brown sugar
1/2 c. granulated sugar
1 egg
1/4 tsp. vanilla flavoring
1 c. sifted flour (all purpose)
1/4 tsp. salt
1/2 tsp. baking soda
3/4 c. quick cooking oatmeal

Allow butter to soften at room temperature or warm over stove. Add sugar a little at a time and mix well. Add egg and vanilla and mix well. Add dry ingredients a little at a time and mix well. Add oatmeal to mixture until blended. Drop on ungreased cookie sheet, using a teaspoon. Bake at 350 degrees for about 10 minutes. Cookies will firm up as they cool on rack.

Makes about 2 1/2 dozen.
