TEXAS CASSEROLE | |
4 strips bacon, chopped 1 green pepper, chopped 1 c. pimento, drained and chopped 2 c. (15 1/2 oz. each) chili with beans 1 1/2 lbs. bologna in one piece 1 onion, chopped 1 clove garlic, chopped 1 c. (1 lb. 12 oz.) pork and beans 2 tsp. aromatic bitters 1 c. shredded sharp cheese In a 2 1/2 quart casserole, fry bacon until crisp. Add onion, green pepper, and garlic. Saute until vegetables are tender. Add pimento, beans, chili and aromatic bitters. Cut bologna into 1-inch cubes and add to beans. Stir to blend mixture. Top with shredded cheese. Bake in a preheated 400 degree oven for 20 minutes or until mixture is bubbly and hot. Serves 8. |
