HARVARD BEETS 
1/3 c. sugar
1 tbsp. cornstarch
1 tsp. salt
1/4 c. vinegar
1/4 c. water
3 c. cooked beets, sliced or diced
2 tbsp. butter

1. Combine sugar, cornstarch and salt. Add vinegar and water. Stir until smooth. Bring mixture to a boil and cook 5 minutes.

2. Add beets to hot mixture and allow to stand for 30 minutes.

3. Just before serving bring to a boil and add butter.
