TOMATO STRATA 
1 box seasoned croutons
Tomatoes (fresh)
1/2 to 3/4 lb. sliced Provolone cheese
1 med. green pepper, chopped fine
1 med. onion, chopped fine
2 tbsp. sugar
1 tsp. salt
1/2 tsp. pepper
1 tsp. oregano
4 tbsp. butter

Butter baking dish. Cover bottom with layer of croutons. Melt butter. Saute pepper and onion. Add seasonings. Alternate layers of tomato and cheese. Pour pepper/onion mixture on top. Cover with foil. Bake at 400 degrees approximately 20 minutes or until cheese is well melted.
