TOMATO STRATA 
6 tbsp. butter
1 med. green pepper, diced
1 1/3 c. chopped onion
1 lg. garlic clove, crushed
2 tsp. sugar
1 1/2 tsp. salt
1 tsp. oregano
1/2 tsp. pepper
8 med. tomatoes, sliced
16 oz. pkg. grated mozzarella cheese
2 c. croutons (Pepperidge Farm sour cream)

Saute pepper, onion and garlic in butter until tender. Add sugar, salt, oregano and pepper; mix well. Spread 1/2 of mixture in bottom of glass baking dish. Line sliced tomatoes and cheese over mixture. Sprinkle croutons on top. Add remaining pepper and onion mixture. Add another layer of tomatoes and cheese. Top with the remaining croutons.

Cover dish and bake 15 minutes at 400 degrees. Uncover and bake 5 minutes longer. Let set 10 minutes before cutting into squares and serve. A delicious Italian dish to serve guests!
