HOMEMADE LIGHT BREAD 
1 cake yeast
2 c. milk
2 tbsp. shortening
7 1/2 c. self-rising flour
1/4 c. warm water
2 tbsp. sugar

Soften yeast in water, scald milk, add sugar and shortening. Cool to lukewarm. When cooled, add 2 cups flour, stirring well. Add softened yeast, add enough more flour to make a moderately stiff dough. Turn out on a lightly floured board and knead until smooth about 8 minutes.

Shape into ball and place in lightly greased bowl. Grease top of dough. Cover and let rise in warm place until doubled (about 1 1/2 hours). Divide dough in half. Shape into 2 loaves. Place in greased bread pans. Let rise until doubled (about 1 hour). Bake in moderately hot oven (400 degrees) for 50 minutes. Makes 2 loaves.
