RIPE TOMATO RELISH 
36 c. chopped tomatoes
9 c. chopped celery
6 c. chopped onions
3 c. chopped green pepper
3/4 c. salt
6 c. sugar
3/4 c. brown sugar
4 1/2 tsp. pepper
1 1/2 tsp. mixed spices
3 c. white vinegar

Combine vegetables with salt and let stand overnight and drain. Add vinegar and spice in a bag. Bring to a boil and simmer 15 minutes. Remove spice, put in hot jars. Process 10 minutes.

Good for Swiss steak, to season stew, or just as relish. Have made it with less sugar too. 14 pints.
