SPLIT PEA SOUP 
2 or 3 smoked ham hocks
1 lg. onion, finely chopped
3 or 4 carrots, diced fine
Spices to taste
1 pkg. green split peas
2 stalks celery

In large pot cook ham hocks and seasoning over high heat about 1 hour. Add all vegetables except peas. Turn heat to simmer until vegetables are tender. Add peas and simmer over low heat until thick and peas are all cooked in. Makes 3 to 4 quarts.
