BAKED BEANS | |
10 lb. navy beans 2 c. molasses 2 tsp dry mustard 1 c. ketchup 1 lb. dark brown sugar 3 lb. salt pork or bacon ends 1 lg. onion, diced Salt and pepper to taste Soak beans overnight in enough water to cover them. In the same water, simmer beans at 300 degrees until skins pierce easily. Do not boil. Add the rest of the ingredients. Mix well. When beans start to boil, reduce heat to 250 degrees for 5-6 hours. Add additional water, if necessary. Makes 50 servings. NOTE: This recipe also can be made in a roaster in the oven. |
