ONION RINGS 
4 med. onions, sliced 1/4" thick
Cold water
3/4 c. all-purpose flour
1 egg, beaten
2/3 c. milk
1 tsp. sugar
1/2 tsp. salt
1 tbsp. shortening, melted & cooled
Oil or shortening for deep fat frying

Separate onion slices into rings; soak in water 30 minutes. Meanwhile, in a small bowl, beat flour, egg, milk, sugar, salt and shortening together. Drain onions and pat dry. With a fork, dip rings into batter. Preheat oil to 375 degrees.

Fry in 1 inch of oil or shortening, a few rings at a time, for 2-3 minutes or until golden brown. Drain on paper towels. Keep warm in a 300 degree oven while frying remaining rings. Yield 4-6 servings.
