FRESH APPLE CAKE 
4 c. peeled, diced apples
2 c. granulated sugar
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1/2 c. Wesson oil
2 eggs, slightly beaten
2 tsp. vanilla
1 c. nutmeats, coarsely chopped
1 c. raisins or dates (or both)

TOPPING FOR CAKE:

1 c. brown sugar
1/2 c. cream
1 c. coconut, shredded
1 c. chopped nuts
4 tbsp. melted butter

Mix apples and sugar and let stand. (If apples are mellow or dry, add 2 tablespoons water.) Sift and mix together flour, soda, salt, cinnamon and nutmeg. Add to apple mixture the oil, eggs, vanilla, nuts, raisins and (or) dates. Add dry ingredients to apple mixture. Mix well.

Bake in 7 x 12 x 2 inch oblong pan at 350 degrees for 1 hour or until sides shrink from pan.

TOPPING: Mix brown sugar, cream, coconut, nuts and melted butter. Pour over warm cake, broil 4 to 5 minutes. For holidays, add candied cherries, pineapple and white raisins. Makes excellent fruit cake, stays moist, keeps well and freezes well.
