MAMA'S RAW APPLE CAKE 
2 c. coconut
1 c. chopped nuts
3 c. raw apples (cubed), Rome or McIntosh good
2 c. sugar
3 c. flour (I use self-rising and omit soda)
1 tsp. baking soda
1 tsp. cinnamon
2 tsp. vanilla
3 or 4 med. eggs
1 1/2 c. vegetable oil
1 c. chopped dates (optional)

Cream sugar and eggs until light. Add oil slowly, add dry ingredients and beat. Add apples, nuts and coconut. This cake will be very thick. Bake in a tube pan at 325 degrees until firm when tested, or about 1 1/2 hours.

This mixture will make a very large cake or two small ones.

ICING FOR CAKE:

1 c. brown sugar (light or dark)
1 stick butter
1/4 c. milk

Combine all ingredients and cook until the bubbles burst. Beat while cooking. Cool and spread on cooled cake.

This cake will keep in freezer for some time. I do not ice if I freeze until ready to use. Very good at Christmas or Thanksgiving.
