GREEK CHICKEN 
Remove skin from chicken. Cut up into small bite-size pieces. One potato per person. Arrange all in 13 x 9 x 2 inch baking dish. Cut up 1 to 1 1/2 sticks butter in pieces and dot over baking dish. Add chicken and potatoes, do not cover chicken with each other - okay if with few potatoes. Add juice of 2 lemons and sprinkle with parsley. Preheat oven to 350 degrees. Bake 1 1/2 hours. Baste chicken and potatoes every 15 minutes.
