TUNA IN A PITA POCKET 
1 (6 1/2 - 7 oz.) can tuna, drained (solid light or white tuna works best)
1/2 carrot, shredded
1/2 zucchini, shredded
1 sm. apple, cored, finely chopped
3 tbsp. sliced green onion
4 tsp. mayonnaise
1 tsp. Dijon mustard
1 tsp. poppy seeds
2 whole wheat pita breads

Combine tuna, carrot, zucchini, apple and onion. Combine mayonnaise, mustard and poppy seeds and toss lightly with tuna mixture. Cut pita bread in half; open to form pocket. Fill pocket with tuna mixture. Makes 2 servings.
