THREE CHEESE HAM PUFF 
6 eggs
3/4 c. Bisquick baking mix
1 c. milk
1 c. creamed cottage cheese
8 oz. Monterey Jack cheese, cut into 1/2 in. cubes
1 (3 oz.) pkg. cream cheese, cut into 1/4 in. cubes
1 (2 1/2 oz.) pkg. smoked, sliced ham, snipped
1/4 tsp. salt
Mushrooms (optional)

Heat oven to 350 degrees. Lightly grease 2 quart casserole. Beat eggs with hand beater. Beat in baking mix and milk until smooth. Stir in remaining ingredients; pour into casserole. Bake until knife inserted near center comes out clean (50 to 55 minutes). Let stand about 10 minutes before serving. Serves 6 to 8 people.

I have made this for years and we love it. I have also used pepper jack cheese instead of mozzarella. Served with salad and rolls for complete meal.

I first made this for a friend in 1980. It is my favorite egg casserole type dish. It is excellent also as a supper main dish alongside fresh fruit. I lost the recipe and am delighted to have found it here. It's in the oven as we speak.
