GIANT OATMEAL COOKIES 
1 c. soft butter
1 c. brown sugar
1 c. white sugar
2 eggs
2 tsp. vanilla
2 c. flour
2 tsp. cinnamon (optional)
1 tsp. baking soda
1/2 tsp. salt
2 c. quick cooking oats
2/3 c. raisins
1 c. nuts (chopped)

Beat first 5 ingredients together until well blended and creamy. Add flour, cinnamon, soda, and salt to creamy mixture and beat well. Stir in oats, raisins and chopped nuts. Roll dough into balls using 1/4 cup of dough for each ball.

Place 6 balls per baking sheet. Dip glass into sugar and press down each ball. Bake at 375 degrees for 10-12 minutes or until cookies are set and very light golden brown. Let cookies cool 1 minute on pan. Remove to rack.
