SOUTH OF THE BORDER CASSEROLE 
2 c. cooked chicken meat
1 (8 oz.) can tomato sauce
3-4 green onions, sliced
1 sm. can sliced olives
Pinch of oregano
Dash of Tabasco sauce
Salt and pepper to taste
8 oz. cottage cheese
8 oz. sour cream
1 sm. can diced chilies
Crushed tortilla chips
Grated cheddar cheese

Combine tomato sauce, green onions, olives, oregano, Tabasco, salt and pepper in a saucepan and simmer for 10 minutes. Combine in a bowl cottage cheese, sour cream, diced chilies; set aside.

In a 9x13 baking dish layer crushed tortilla chips, chicken meat, sauce mixture, cottage cheese mixture, grated cheese. Repeat layers; top with crushed tortilla chips. Bake at 350 degrees until bubbly, approximately 25-40 minutes.
